Japanese potato salad

This recipe has been with me for very long. Its the best salad i ever have and if u just want a sandwich, u can put some of these salad in it too. Makes a very refreshing salad sandwich. U can put them into bento boxes to make a nice salad.

Ingredients :
  • 3 medium boiling (firm) potatoes
  • 1 small carrot
  • About 10 cm / 4 inches of a seedless cucumber
  • 1 small onion (i omit this most of the time =p)
  • 1 egg
  • Salt and pepper (I prefer putting abit of sugar as well)
  • 3/4 to 1 cup of Japanese Mayonaisse ( I used the one with the picture of a baby)
Instructions :
  1. Boil potatoes until tender and peel off the skin.
  2. Boil/steam carrot for a while ( dont want it to be too mushy, keep it abit crunchy) U can leave it uncook as well if u dont mind eating fresh carrot
  3. Boil the eggs
  4. Cut up the cucumber into small cubes and slice the onions thinly.
  5. Cut both the cooked potatoes and carrots into small cubes.
  6. Peel the hard boiled egg and chop up finely including the yokes.

When the potatoes and carrot mixture has cooled to room temperature, mix in the cucumber, onion and egg. Mix in the mayonnaise and sprinkle some salt/sugar/pepper according to your taste. Cover with plastic wrap and cool in the refrigerator until serving time (ideally at least one hour).

Learn them fast, Forget them fast.

Like a kid at heart, i am always eagerly learning new things. New games, new skills, new languages, new recipes etc. But alongside being a kid, i forget them fast. *grin*. Sometimes i would say i am a jack of all trades but master in none.

Currently i am into knitting n crochet. Just manage to get my first few pairs of baby booties for my friend's and my own coming baby. Took up a course in The Frontier CC. Wish i could take up the jewellery making class too, but the course timing crashes.

Urging my hubby to help buy a new kitcher stroller, so i can hop into my hobby of baking. I wonder when is that going to happen since i am going to "pop" in 3-4 months time.

Hopefully soon i can get hold of a new digital camera and post some works of mine.
Been gathering recipes for a while, but yet never able to put them into practise. Wat a waste! I can imagine wat hubby will say "Good, so i dont have to be guinie pig".

Wat else can i do ? Being a stay at home Mum, i cant do much right now with my big tummy.
May God guide me into a trade and at the same time hobby that i could have and earn some money out of it.
